Cleaning and Maintaining Commercial Range

Like many other equipment in your kitchen, the commercial range in your kitchen requires proper cleaning and maintenance to ensure peak performance. Over time, you can also save up a large sum of repairing fees. 

But how should you go about doing it? 

Do Frequent Cleaning

No matter how exhausted you are after a long day of running your business, cleaning the commercial range is a step you should never miss. Grease and residue should be wiped off because they might trigger the corrosion of metal and provide a perfect breeding ground for bacteria. A key point to always remember - the longer the grease sits, the harder it is to remove it. Thus, daily cleaning is recommended. If your range consists of an oven, cleaning the interior of the oven at least once a month is ideal.

Certain parts such as the crumb tray and burners can be easily removed for thorough cleaning. Getting rid of the surrounding particles can hamper bacteria growth in addition to keeping the particles from catching fire.

Use Appropriate Cleaner

Metal is sensitive to certain chemicals. With that in mind, you should not try to clean your range with any caustic, alkaline or abrasive solution. In the event you have used something of the sort, the shiny surface of the range might be affected. Using a steel wool is also a big N-O as it tends to cause the surface to rust. Generally, a non-abrasive pad and warm soapy water should suffice.

Go For Warm Water

Warm water removes grease and residue better than water at room temperature. The heat in water loosens the particles and thus eases cleaning. Considering your personal safety, be sure that you allow the range to cool before coming into contact with the surface.

Re-season Cast Iron Grate On A Yearly Basis

It is advisable to re-season the cast iron grate when the initial seasoning flakes off or when it has been a year since the last seasoning, whichever comes first. All you have to do is to coat a layer of cooking oil on the grate and heat up the burner a little.

Tolerate Discoloration

Having black marks on your commercial range is very common for the range deals with extreme temperature and spills. You can improve the condition by scrubbing on the surface but at the end of the day, you would still have to bear with the discolouration.
