Crispy Puff Pastry Mooncake with Pork & Pickled Mustard 榨菜鲜肉月饼

『食材』

饼皮准备

【水油皮面团】:

设在熬乐多主锅内放入水95g、糖25g、猪油120g、面粉300g,30秒/速度1~5混合。

设定搅拌模式2分钟,揉好的面团取出揉成一个团并用保鲜膜包住备用。

 

 【油酥面团】:

放入面粉200g、猪油100g,30秒/速度1~5混合,

设置搅拌模式1分钟,取出保鲜膜包好备用。

馅料准备:

 

【榨菜肉馅】

1.将生姜放入5秒速度7打碎、肉糜放入熬乐多

2.放入料酒1茶匙、生抽1汤匙、麻油1茶匙、盐1茶匙、糖粉1汤匙、现磨黑胡椒、榨菜丝40g,30秒/速度2反转键。

3.品尝一下咸淡,用酱汁作调节。放入冰箱冷藏一会更容易包

 

『做法』

1.分别将两个面团分成20等分。水油皮约25g/个,油酥约15g/个。

2.每个水油皮包住油酥,并压扁擀成薄薄的鸭舌状,并从一头卷起。

3.卷好的面团用保鲜膜包好松弛10分钟。全部20个完成后再从第一个开始再擀成长条再卷起。这样才会一层一层有好多层次。

包月饼:

1.将卷好的油酥皮两头对折用掌心压扁,轻轻擀成圆片,包入榨菜鲜肉馅,收口朝下,轻轻往下压,成一个饼状。敲上印章或刷上蛋液、撒上芝麻。

2.烤箱设定200度预热,将月饼放入,设定25~30分钟/200度烤制(根据烤箱不同调整时间)

Direction
