2 颗 去核青梅 ,腌渍过的
2 瓣 蒜头
1 茶匙 糖
1 片 姜
1/2茶匙 米酒
1/2茶匙 淀粉
1 茶匙 油

梅子蒸蟹:
2 只 花蟹
500 克 水 ,蒸煮用
柠檬汁 ,适量,依个人口味调整
『做法』
梅子酱:
1.将去核的腌梅、蒜头、糖、姜、米酒放入主锅,以5 秒/速度 5切碎,用刮刀棒将食材刮至主锅底。
2.加入淀粉、油和盐,以10 秒/速度 5混合,倒入碗内备用。
梅子蒸蟹:
1.取两只花蟹,打开蟹盖,去除胃,用刀削去蟹盖边。去除蟹腮,减去蟹钳,用刀背将蟹钳拍碎。
2.取一张烘焙用纸浸湿后平铺在蒸盘上,将蟹放在蒸盘上,均匀地淋上制作好的梅子酱。将盛有梅子酱蟹的蒸盘置入蒸锅备用。
3.将水放入主锅,以8 分/120度/速度 1煮沸。
4.架上蒸锅组,以10 分/120度/速度2蒸煮,取下蒸好的蟹淋上柠檬汁,即可享用。
Ingredients
Plum sauce:
2 green plums, pitted, pickled
2 cloves garlic

1 slice ginger

1/2 teaspoon starch
1 teaspoon oil

Steamed crab with plum:
2 flower crabs
500 g water for cooking
Lemon juice, appropriate amount, adjust according to personal taste

Plum sauce:
1. Put the pitted pickled plum, garlic, sugar, ginger, and rice wine into the mixing bowl, chop them at 5 seconds/speed 5. Use a spatula to scrape the ingredients to the bottom of the mixing bowl.
2. Add starch, oil and salt, mix at 10 seconds/speed 5, pour into a bowl and set aside.
Steamed crab with plum:
1. Take two crabs, open the crab lid, remove the stomach, and trim off the edge of the crab lid with a knife. Remove the crab gills, subtract the crab claws, and smash the crab claws with the back of a knife.
2. Take a piece of baking paper soaked in it and spread it flat on the steaming tray, place the crab on the steaming tray, and evenly pour the prepared plum sauce. Put the steaming tray with crabs in plum sauce in the steamer for later use.
3. Put water in mixing bowl and boil at 8 min/120 degrees/speed 1.
4. Set the steamer set, steam at 10 minutes/120 degrees/speed 2, remove the steamed crab and drizzle with lemon juice, and enjoy.
