『食材』

冰皮材料

糯米粉 45克

粘米粉 35克

澄粉 20克

玉米油 18克

牛奶 185克

糖粉 50克

馅料

豆沙、莲蓉、芋泥任何一种都行 250g左右

手粉(糕粉)

糯米粉 100g

 

『做法』

1.将牛奶、玉米油(也可以葵花籽油等色浅无味的植物油,不要用橄榄油、花生油等有特殊气味的油)、糖粉、糯米粉、粘米粉、澄面所有冰皮的食材倒入主锅,30秒/速度6,搅拌均匀。

2.混合好的粉浆,倒入耐热玻璃碗。

3.表面盖上保鲜膜,放入蒸锅,主锅倒入1/3的冷水,40分钟/120度/速度小勺,蒸熟。

4.蒸好之后,放凉到不烫手的程度。

5.带上一次性手套,把皮揉均匀,这时候,如果想做有颜色的皮,可以加一些抹茶粉或者可可粉趁热揉匀。

6.事先准备一些糕粉(即手粉),如果没有现成的糕粉,将100g糯米粉放入主锅,10分钟/120度/速度2翻炒,冷却后即为糕粉。

7.冷却后的冰皮和馅按5:5的比例分成小份。

8.手上沾少许糕粉防粘,将冰皮放在手心压扁,馅放在冰皮上,用冰皮把馅包起来,收口捏紧。月饼模里撒一些糕粉,晃一晃,使糕粉均匀的沾在月饼模上,再把月饼模在手心磕一磕,将多余的糕粉磕出来。把包好的面团放入月饼模。压出月饼形状,就可以了。

9.做好的冰皮月饼,包上保鲜膜,放冰箱冷藏数小时后再食用,口感最佳。如果暂时吃不完,就包装好急冻,想吃的时候提前半天拿到冷藏即可。

6. Prepare some cake flour (ie hand flour) in advance. If there is no ready-made cake flour, put 100g glutinous rice flour in the mixing bowl, stir fry for 10 minutes/120 degrees/speed 2, and it will become cake flour after cooling.

 

7. After cooling, the ice crust and filling are divided into small portions at a ratio of 5:5.

 

8. Dip a little cake powder on your hands to prevent sticking, put the ice skin on the palm of your hand and squeeze it, put the filling on the ice skin, wrap the filling with the ice skin, and close the mouth tightly. Sprinkle some cake powder in the moon cake mold and shake it to make the cake powder evenly spread on the moon cake mold, and then knock the moon cake mold in the palm of your hand to knock out the excess cake powder. Put the wrapped dough into the moon cake mold. Press out the shape of the moon cake, and that's it.

 

9. The finished snowy moon cakes are wrapped in plastic wrap and stored in the refrigerator for several hours before eating. The taste is best. If you can't finish eating it temporarily, just pack it and freeze it, and get it in the refrigerator half a day in advance when you want to eat it.
