Simmered Brisket with Lotus Root 莲藕炖牛腩

『食材』

牛腩500克

莲藕200克

洋葱50克

葱段15克

姜片10克

蒜15克

油10克

老抽10克

有机酱油15克

料酒20克

手工红冰糖1勺

花椒1克

干辣椒5克

 

 

『做法』

1、将牛腩切块儿,莲藕切成滚刀块 备用。

2、辅助蓝里放牛腩加入1500毫升水,以50度/5分钟/速度5 清洗。

3、锅中放入油、姜、蒜、花椒、干辣椒,以120度/1分钟/逆转/小勺 爆香。

4、加入牛腩、酱油、糖、料酒、400毫升水,以120度/30分钟/逆转/小勺 炖制。

5、加入莲藕,以120度/40分钟/逆转/小勺,炖熟。

6、加入洋葱、葱段,以120度/2分钟/逆转/小勺,煮熟。

 

Ingredients

500g beef brisket

Lotus root 200g

50g onions

15 g shallots

10g sliced ginger

15 grams garlic

10 grams of oil

10 grams of soy sauce

15 grams of organic soy sauce

20 grams of cooking wine

1 scoop of handmade red rock sugar

1 g pepper

5 grams dried chili

 

Direction

1. Cut the sirloin into pieces, and cut the lotus root into hob pieces for later use.

 

2. Add 1500 ml of water to the sirloin in the auxiliary blue, and wash at 50 degrees/5 minutes/speed 5.

 

3. Put oil, ginger, garlic, Chinese pepper, and dried chili in the pot, and saute at 120°C/1 minute/reverse/small spoon.

 

4. Add sirloin, soy sauce, sugar, cooking wine, 400 ml of water, and simmer at 120 degrees/30 minutes/reversal/small spoon.

 

5. Add lotus root, simmer at 120°C/40 minutes/reverse/spoon.

 

6. Add onion and green onion, and cook at 120°C/2 minutes/reverse/spoon.
