Sambal Petai

Sambal Petai

INGREDIENTS

Sambal Paste:

50g Red Onion

40g Red Chili, deseeded

10g Garlic

20g Lemongrass

10g Galangal, peeled

3g Dried Chili, soaked

15g Tamarind Paste

50g Water

25g Dried Shrimp

25g Brown Sugar

30g Oil

Sambal Petai:

70g Sambal Paste

60g Red Onion, sliced

100g Petai

15g Oil

INSTRUCTION

Sambal Paste:

Dilute the tamarind paste with water.

Blend red onion, red chili, garlic, lemongrass, galangal, dried chili and diluted tamarind using Speed 10 for 20 seconds.

Add in the oil and cook using Speed 1 at 110°C for 30 minutes.

Add in the rest of the ingredients, and continue cooking using Speed 1 at 110°C for 15 minutes without Measuring Cup.

Set aside and let it cool.

Sambal Petai:

Place the red onion and oil into Allda bowl, fragrant it using Steam at Speed 1 for 3 minutes.

Add in sambal paste and petai, cook it at Speed 1 for 8 minutes using Steam.
