Pumpkin Mantou

INGREDIENTS

300g Pumpkin, trimmed and sliced thin

500g Plain Flour

100g Water

70g Sugar

10g Yeast

5g Baking Powder

2g Salt

30g Oil

INSTRUCTION

Add 1 litre of water into the bowl, place the pumpkin into water, boil at Steam with Stir for 15 minutes.

Insert Allda basket into Allda bowl, pour away the water.

Blend the cooked pumpkin at Speed 8 for 5 seconds. Set aside and let it cool down.

Place the cooled pumpkin back into Allda bowl and add in the remaining ingredients, mix everything for 1 minute with Speed 4.

Press Dough and knead for 5 minutes until gluten forms. Remove the dough and place inside the steaming bowl with the lid over.

Set aside and let it proof for an hour or double in size.

Punch down and portion the dough 40g each, then shape it and place on cut parchment paper. Arrange them on the steaming bowl with lid over.

Let it proof for another hour or double in size.

Add 1 litre of water into Allda bowl with steaming bowl on top, steam the dough at 110°C with Speed 2 for 20 minutes.
