Pepper Crucian Carp 双椒鲫鱼

双椒鲫鱼是江湖菜中的一道名菜

鲫鱼肉质细嫩,肉味甜美,含大

吃鲫鱼不仅能健身,还能减少肥

胖,有助于降血压和降血脂,使

人延年益寿

 

主要材料 :

鲫鱼1条300g

红尖椒20g

绿尖椒20g

油50g

调味辅料 :

料酒20g

花椒20g

豆瓣酱30g

生抽10g

葱花少许

蒜5瓣

盐若干

淀粉1/2勺匙

需提前准备材料 :

将鲫鱼去鳞、去腮、剖腹清理内脏,双面切横口(刀口不要过深)双面抹匀盐、淀粉、料酒,装盘腌制20分钟,然后倒掉多余料酒备用

制作方法 :

 1、将绿尖椒、红尖椒、蒜放入主锅内,以4秒/速度6搅拌用刮刀棒刮至锅底

2、加入花椒、油、豆瓣酱、生抽,120度 /3分钟/速度3爆香,结束后均匀撒在装盘备用鲫鱼上

 3、架上蒸锅,以120度/30分钟/速度3烹饪,结束后端出撒上葱花即可

20g red hot pepper

Green pepper 20g

Oil 50g

Seasoning accessories:

Cooking wine 20g

Pepper 20g

Bean Paste 30g

10g light soy sauce

A little chopped green onion

5 cloves of garlic

Some salt

1/2 tbsp of starch

Need to prepare materials in advance:

Remove the scales, gills, and cesarean to clean the internal organs of the crucian carp, cut on both sides (not too deep), wipe salt, starch, and cooking wine on both sides, marinate for 20 minutes, then pour out the excess cooking wine and set aside

Direction

1. Put the green hot pepper, red hot pepper and garlic into the mixing bowl, stir 4 seconds/speed 6 and scrape to the bottom of the pot

2. Add pepper, oil, bean paste, light soy sauce, and saute at 120°C/3 minutes/speed 3, and evenly sprinkle it on the reserved crucian carp

3. Set the steamer, cook at 120 degrees/30 minutes/speed 3, and sprinkle with chopped green onion on the back end.
