3 ripe bananas, mashed
1 banana, sliced (for topping)
1 3/4 cups flour
1 cup granulated sugar
1/2 cup vegetable oil
1/4 cup milk
2 teaspoons baking soda
1 teaspoon vanilla
Dash of cinnamon
1/4 cup walnuts, pecans or chocolate chips (optional)
Preheat oven to 162 degrees.
Combine eggs, oil, sugar, milk, vanilla and mashed bananas.
Add in baking soda and flour.
Combine well for up to 3 minutes.
Pour batter into a greased loaf pan. Tap gently for a few times on table top to release trapped air bubbles.
Garnish with banana slices, if desired.
Bake for an hour in preheated oven or until a toothpick inserted in the middle of the cake comes out clean.
Allow to cool before serving with coffee or tea.
