INGREDIENTS
200g Sugar
15g Lime Rind
50g Lime Juice
220g Butter
200g Egg
200g Plain Flour
10g Baking Powder
40g Blueberry, half
INSTRUCTION
Oil 2 baking mould (15 x 9 x 5cm) and pre-heat the oven to 170°C.
Blend the sugar, lime rind and lime juice at Speed 8 for 10 seconds.
Add in butter and mix for 1 minute at Speed 5.
Add in egg and mix for 40 seconds at Speed 5.
Add in the dry ingredients and mix for 15 seconds at Speed 5.
Pour 250g batter into each baking mould and press the blueberry into the batter, then bake for 30 minutes.
