Kuah Kacang

Kuah Kacang

Bahan-bahan:


1 ½ kilo kacang tanah (digoreng tanpa minyak)
10 biji bawang merah
4 ulas bawang putih
1 ½ inci halia
10 tangkai cili kering
3 sudu udang kering
2 batang serai (dititik)
1000 ml air
1 keping gula melaka
Sedikit air asam jawa
Sedikit minyak
Gula dan garam secukup rasa


Cara memasak:


1. Kisarkan kacang tanah selama 10 saat / Kelajuan 5. Ketepikan.
2. Masukkan bawang merah, bawang putih, halia, cili kering, udang kering dan sedikit air. Kisarkan selama 20 saat / Kelajuan 8.
3. Seterusnya, masukkan sedikit minyak dan serai yang telah dititik. Tumiskan selama 7 minit / Suhu 120 ℃ / Reverse / Kelajuan 2.
4. Tambahkan air, kacang tanah, gula melaka, air asam jawa, gula dan garam secukup rasa. Masakkan selama 15 minit / Suhu 100 ℃ / Reverse / Kelajuan 1.
5. Hidangkan bersama dengan nasi impit. 


Ingredients:


1 kilo of peanuts (fried without oil)
10 shallots
4 cloves garlic
1 ½ inch ginger
10 stalks of dried chilies
3 tablespoons dried shrimp
2 stalks of lemongrass
1000 ml of water
1 piece of gula melaka
A little tamarind water
A little oil
Sugar and salt to taste


Cooking method:


1. Blend peanuts for 10 seconds / Speed 5. Set aside.
2. Add shallots, garlic, ginger, dried chili, dried shrimp and a little water. Blend for 20 seconds / Speed 8.
3. Next, add a little oil and lemongrass. Saute for 7 minutes / Temperature 120 ℃ / Reverse / Speed 2.
4. Add water, peanuts, gula melaka, tamarind water, sugar and salt. Cook for 15 minutes / Temperature 100 ℃ / Reverse / Speed 1.
5. Serve with nasi impit.
