Honey Bread 蜂蜜小面包

『食材』

高筋面粉200克

低筋面粉5克

酵母粉3克

泡打粉1克

鸡蛋1个

牛奶80克

岩盐1克

手工红冰糖30克

白芝麻15克

山茶油15克

蜂蜜2茶匙

 

『做法』

1、锅中加入牛奶、鸡蛋、酵母粉以37度/2分钟/速度2 搅拌均匀。

2、加入高筋面粉、20克糖、盐、一茶匙蜂蜜、小苏打,以3分钟/搅拌。

3、加入山茶油,以4分钟/搅拌。

4、取出面团盖上保鲜膜发酵1小时。

5、将白芝麻、低筋面粉、10克糖放入碗中搅拌成沾料。1茶匙蜂蜜中加入2茶匙水调成蜂蜜水。

6、发酵后用手揉几分钟给面团排气,拿出面团分割成6份,将面团擀成长圆形,卷起,从中间切开,切面先沾一些清水,然后沾满混合沾料,然后将沾料向下,烤盘底部刷油,放置烤盘。刷上蜂蜜水,撒上芝麻。

7、烤盘上放上一碗热水,放入预热好的烤箱二次发酵。

8、发酵至两倍大,取出水,以170度/15分钟 烤制。

200g high-gluten flour

5g low-gluten flour

Yeast powder 3 grams

1 egg

80g milk

1g rock salt

30 grams of handmade red rock sugar

15g white sesame seeds

Camellia oil 15g

2 teaspoons of honey

 

 Direction

1. Add milk, eggs, and yeast powder to the pot and stir evenly at 37 degrees/2 minutes/speed 2.

 

2. Add high-gluten flour, 20 grams of sugar, salt, a teaspoon of honey, and baking soda, and stir for 3 minutes.

 

3. Add camellia oil and stir for 4 minutes/stir.

 

4. Take out the dough, cover it with plastic wrap, and ferment for 1 hour.

 

5. Put white sesame seeds, low-gluten flour, and 10 grams of sugar into a bowl and stir to form a dip. Add 2 teaspoons of water to 1 teaspoon of honey to make honey water.

 

6. After fermentation, knead the dough by hand for a few minutes to exhaust air, take out the dough and divide it into 6 parts, roll the dough into a round shape, roll it up, and cut it from the middle. The cut surface is first moistened with some water and then covered with the mixture. Then put the sauce down, brush the bottom of the baking pan with oil, and place the baking pan. Brush with honey water and sprinkle with sesame seeds.

 

7. Put a bowl of hot water on the baking tray and put it in the preheated oven for second fermentation.

 

8. Ferment to double the size, take out the water, and bake at 170 degrees/15 minutes.
