Fish in Hot and Sour Soup 酸汤鱼

酸菜鱼也称为酸汤鱼

是一道源自重庆的经典菜品

以草鱼为主料

配以泡菜等食材煮制而成

口味酸辣可口

鱼含丰富优质蛋白

能提供人丰富的蛋白质

矿物质等营养

酸菜中的乳酸可以促进人体对铁元素的吸收

还可以增加人的食欲。

 

准备食材 :


巴沙鱼片500g

有机酸菜200-300g

蘑菇50g

泡椒30g

油30g

泡姜30g

水1200g

蒜片10g

料酒30g

葱段10g

胡椒粉1/2勺匙

鸡精1勺匙

盐1-2勺匙

淀粉1/2汤匙

花椒1勺匙

 

操作步骤 :

 

1、把有机酸菜清洗干净后用水浸泡20分钟,沥干水分切丝备用

2、把鱼切片、料酒、胡椒粉、盐1/2勺匙、淀粉、放入碗里,拌匀腌制15分钟备用

3、将泡椒、泡姜放入主锅中,以10秒/速度4切碎,用刮刀棒刮置锅底,将油、花椒、葱段、蒜片、酸菜均匀放入蝴蝶棒两侧,以120度/5分钟/逆转小勺拌炒

4、加入蘑菇片、水、鸡精、盐1勺,以110度/20分钟/逆转小勺烹煮,剩余5分钟时,从主锅孔中加入腌制好的鱼片,结束后装盘即可。


Ingredients :


Pangasius Fillet 500g

Organic sauerkraut 200-300g

50g mushrooms

Pickled pepper 30g

30g of oil

Bubble ginger 30g

Water 1200g

10g garlic slices

Cooking wine 30g

10g scallions

1/2 tablespoon of pepper

1 tablespoon of chicken essence

1-2 spoons of salt

1/2 tbsp starch

1 tablespoon of pepper

Steps :

1. Clean the organic sauerkraut and soak in water for 20 minutes, drain the water and cut into shreds for later use

2. Put the sliced fish, cooking wine, pepper, 1/2 spoon of salt, starch, into a bowl, mix well and marinate for 15 minutes.

3. Put pickled peppers and pickled ginger into the mixing bowl, chop them at 10 seconds/speed 4, scrape the bottom of the pan with a spatula, put the oil, pepper, green onion, garlic slices, and sauerkraut evenly on both sides of the butterfly stick , Stir fry at 120 degrees/5 minutes/reversed spoon

4. Add mushroom slices, water, chicken essence, and 1 spoon of salt, and cook at 110 degrees/20 minutes/reverse spoon. When the remaining

5 minutes, add the marinated fish fillets from the hole in the mixing bowl, and place it on the plate.
