酸菜鱼也称为酸汤鱼

以草鱼为主料
配以泡菜等食材煮制而成

准备食材 :
巴沙鱼片500g
有机酸菜200-300g
蘑菇50g
泡椒30g
油30g
泡姜30g
水1200g
蒜片10g
料酒30g
葱段10g
胡椒粉1/2勺匙
鸡精1勺匙
盐1-2勺匙
淀粉1/2汤匙
花椒1勺匙
操作步骤 :
2、把鱼切片、料酒、胡椒粉、盐1/2勺匙、淀粉、放入碗里,拌匀腌制15分钟备用
3、将泡椒、泡姜放入主锅中,以10秒/速度4切碎,用刮刀棒刮置锅底,将油、花椒、葱段、蒜片、酸菜均匀放入蝴蝶棒两侧,以120度/5分钟/逆转小勺拌炒
4、加入蘑菇片、水、鸡精、盐1勺,以110度/20分钟/逆转小勺烹煮,剩余5分钟时,从主锅孔中加入腌制好的鱼片,结束后装盘即可。
