Featured Product: DAIREI UF-250 Super Freezer

When we think of storing raw ingredients for a long time, we think of freezers.Whether its upright, display or chest type, they are made for the singular function of freezing food to protect food from spoilage. Many people like to buy in large quantities and then store it in the freezer for a long time. But there is almost always a slight compromise on quality, ie. it no longer looks the same as it did on the day it was purchased.

This super freezer by Dairei revolutionizes the freezing game. With cryogenic freezing technology, this freezer can achieve temperatures as low as -60°C. If lower temperatures are what you require, this brand also have -80°C freezers.

It measures at 820 x 705 x 865mm(H) with a capacity of 210L. Being a single-phase equipment, it uses a 15A 3-pin plug connection with a voltage of 220V-240V and a frequency of 50/60Hz. The freezer has a temperature range of -60°C to 3°C, making it able to offer much lower temperatures than any other freezers in the market.

The freezer also comes with a basket, allowing you the option of placing your frequently-used ingredients within easy access, above the other items in the freezer. Given that the freezer is most likely used to store your most prized raw ingredients, the freezer can be locked to only allow the chef to access it.

To most users, the operating temperature of -60°C is a fairly new concept but this technology has always existed. In fact, it has always been used on pelagic tuna fishing vessels where their voyages can last from anywhere between one to two years.

Being one of the top freezer brands in the world, DAIREI saw the potential of this technology for use with other types of food. Now, they have successfully created what no other freezer brands could, a range of freezers incorporating cryogenic freezing technology.

There are numerous advantages to storing food at -60°C as such temperatures are able to significantly increase the shelf life of foodstuffs.

For one, food flavours can be preserved. Thanks to their static cooling systems, food does not dry out even when it is stored for a long time, say 2 years or more. But if you were to use a conventional freezer that is unable to achieve such low temperatures, you might notice deterioration in color or freshness by the time you take it out from storage.

At the same time, it allows you to shop less frequently and buy in bulk as you can always store the surplus for a later time. In doing so, your business is able to keep costs low, and as a result, you can offer more competitive prices to customers when it comes to your food. More bargaining power with your suppliers and better value for your customers, what's not to love?

When you store your raw ingredients at -60°C, there is increased food safety. At such subzero temperatures, you are able to effectively prevent the oxidation and drying of fats while simultaneously limiting protein breakdown in the food. So much so that you can forgo the use of preservatives and additives when it comes to sourcing for healthier and safer food ingredients.

It can also help prevent oxidation and dryness of food. When oxidation occurs, the moisture content in food will gradually decrease when it comes into contact with oxygen. But with no air movement whatsoever, this super freezer is able to prevent oxidation from occurring over a long period of time.

Furthermore, storing food in this freezer helps prevent degradation. All food products contain a certain amount of proteins within, and bacteria and germs in it will decompose the food. Through the decomposition process, amino acids will be formed which will affect the freshness and destroy the internal structure. But at -60°C, the production of amino acids will be inhibited.

With bacteria and germs unable to do what they do, this freezer can help suppress microorganism growth. There is practically no cell and enzyme activity, so food products is kept very fresh.
