Fagor 900 series NG 80 litre crank tilting Bratt pan with SS burner and Temp control SBG9-10I. The Bratt pans in the 900 Series have counterbalanced hinged lids with a lower reinforced recess. The hinge allows the lid to be opened at any angle. The pans have a temperature control thermostat with a temperature range of 50°C to 315°C, and pilot lights to indicate machine on and machine heating.

What is Bratt Pan?

Bratt Pan is a heavy-duty commercial cooking appliance that is capable of performing up to eight cooking functions: boiling, steaming, stewing, roasting, braising, poaching, deep-fat frying and shallow frying. Bratt pans are mostly used in mass catering establishments such as schools, hospitals or large staff canteens for producing large volumes of food. Due to their size, they are rarely if ever used for domestic purposes.

Why is it called ‘Bratt’ Pan?

The name came from the German word 'brat' meaning to fry, though they are not called bratt pans in German, but ‘kippentopf’, meaning tilting pan. They also do far more than fry: bratt pans have deep, rectangular cooking pots with a counter-balanced pull-down lid. The heat source to the base of the pan is either gas or electric. They all have a tilting feature, operated electrically or by a hand-driven mechanism.
