Coconut Snow Skin Mooncake with Yam

INGREDIENTS

80g Gao Flour

100g Icing Sugar

70g Coconut Milk

15g Shortening

600g Yam, cubes

INSTRUCTION

Mix all the ingredients (except Yam) in Allda bowl using Speed 3 for 20 seconds until it forms a dough.

Chill for an hour to let it firm. 

Fill the Allda bowl with 1 litre of water, insert the Allda basket with yam in it then Steam with Speed 3 for 15 minutes.

Strain away the water, set aside and let it cool. 

Place the cooled yam into Allda bowl, mash it using Speed 3 for 5 seconds.

Roll the mashed yam into 30g each and forms a ball. Then portion the snow skin dough to 15g each and roll out flat.

Wrap the yam with the dough, seal the opening and make it round.

Press the dough into 1.5 inches mooncake mould, then remove once the patterns are formed. 

Keep in fridge, let it cool and harden slightly before serving.
