Cantonese Mooncake 广式月饼

『食材』

中筋面粉500克

转化糖浆300克

花生油150克

枧(碱)水10克

咸蛋黄22个(烤熟对半切)

红豆沙980克

鸡蛋一个

 

『做法』

1.面粉、转化糖浆、油、枧水放进主锅,以3分/速度2混合,再设置2分钟,按下搅拌键和面。取出面团搓成一团放在揉面垫上用盆子盖上,静置15分钟。

2.面团静置时分割红豆沙(一个22克)包上蛋黄,搓成球状。分割面团,一个22克,一样搓成球状。(熟手可以15-18克面团,豆沙32-35克)

3.将面团用手压平,包上馅料,用虎口慢慢推收口,用50克月饼模具按压成型。放烤盘上。

4.烤箱提前190度预热5分钟,放进月饼烤10分钟拉出来刷蛋液(全蛋加5克水打匀)。再烤10分钟即可。(这一步需要视烤箱情况而定)

5.月饼要回油,放入密封的容器中,回油2-3天左右即可

Direction

1. Put the flour, invert syrup, oil, and soap into the mixing bowl, mix at 3 min/speed 2, set for another 2 minutes, press the stir button to knead the dough. Take out the dough and knead it into a ball, place it on the kneading mat, cover it with a basin, and let it sit for 15 minutes.

 

2. When the dough rests, divide the red bean paste (22 grams each), wrap it with egg yolk, and knead it into a ball. Divide the dough, 22 grams each, and knead it into balls. (Cooked hands can 15-18 grams of dough, 32-35 grams of bean paste)

 

3. Flatten the dough by hand, wrap it with fillings, slowly push and close the mouth with a tiger's mouth, and press it into a 50g moon cake mold. Put it on the baking tray.

 

4. Preheat the oven at 190 degrees in advance for 5 minutes, put in the mooncakes and bake for 10 minutes, pull out and brush the egg mixture (whole eggs and 5 grams of water, beat well). Bake for another 10 minutes. (This step depends on the oven situation)

 

5. To return the oil to the mooncake, put it in a sealed container and return the oil for about 2-3 days
