Black Sesame with Mantou 黑芝麻馒头

『食材』

熟黑芝麻50克

猪油(可换玉米油)15克

白糖30克

水180克(不同面粉吸水性不同,根据面粉调整)

酵母4克

面粉350克

 

『做法』

1.50克熟芝麻放入主锅,2秒/5次瞬间动作键,然后放入水、白糖、酵母,三分钟/37度/速度2,然后再设置10秒/速度10。

2.把所有液体刮至锅底。加入面粉、油,30秒,速度从3到6混合。最后设置3分钟/搅拌键,取出后整理成团。放置温暖处,发酵至1.5倍~2倍大。

3.将发酵好的面团切块整型,放入蒸锅中进行二次醒发,放置10分~15分钟左右。

4.主锅600克水,将蒸锅架上主锅,设置30分钟/120度/速度小勺,蒸熟后即可。

2. Scrape all the liquid to the bottom of the pot. Add flour and oil for 30 seconds and mix at speed from 3 to 6. Finally set the 3 minutes/stir button, take it out and arrange it into a dough. Place in a warm place and ferment to 1.5 to 2 times larger.

 

3. Cut the fermented dough into pieces and put it in a steamer for a second proofing, and leave it for about 10 to 15 minutes.

 

4. With 600 grams of water in the main pot, put the steamer on the main pot and set a small spoon of 30 minutes/120 degrees/speed, and it is ready to be steamed.
