Bean Paste 豆沙酥

#红豆小知识# 红豆本身含有丰富的纤维素、配糖体及三萜皂苷,常吃红豆可净化血液、消除疲劳,对心脏病、肾脏病患者都有所助益。红豆中富含膳食纤维,有助于肠道蠕动,并能清除肠内废物,预防便秘。

材料

100克 低筋面粉

50克 黄油

1个 鸡蛋

25克 手工红冰糖

适量 自制红豆沙

10克 芝麻

做法

1) 锅中插入起泡器,放入黄油、鸡蛋,分三次放入手工红冰糖,以5分钟/速度2 搅拌。

2) 去掉起泡器,加入低筋面粉,以2分钟/搅拌。

3) 取出面团分成两份,放在案板上分别擀成薄片。

    红豆沙放置保鲜膜上,擀成薄片,擀好后铺在一块面片上,再盖上另外一块面片。

    切掉多余的边角成正方形,切成小块。

    取出一小块,在表面上刷一层蛋液,再取一小块盖在上面,压实,依次处理。

4) 放入烤盘,刷上蛋液,撒上芝麻。放入预热好的烤箱,以170度/20分钟,烤制表  面金黄即可。

100 g low-gluten flour

50g butter

1 egg

25g handmade red rock sugar

Right amount homemade red bean paste

10g sesame seeds

 

【Direction】

  1. Insert a bubbler into the pot, put butter, eggs, and hand-made red rock sugar in three times, stirring at 5 minutes/speed 2.
  2. Remove the aerator, add low-gluten flour, and mix for 2 minutes.
  3. Take out the dough and divide it into two parts. Place them on the chopping board and roll them into thin slices.
  4. Place the red bean paste on the plastic wrap, roll it into thin slices, spread it on one piece of dough, and cover with another piece of dough.
  5. Cut off the extra corners into a square and cut into small pieces.
  6. Take out a small piece, brush a layer of egg liquid on the surface, then take a small piece to cover it, compact it, and process it in sequence.
  7. Put in a baking tray, brush with egg mixture, and sprinkle with sesame seeds. Put it in the preheated oven and bake it at 170°C/20 minutes until the surface is golden.
